Ingredients

Main Ingredients
- 2 c kidney beans
- 1 Onion, medium
- 2 Tomatoes
- 1 tbsp Garlic, crushed
- 1.5 tbsp Ginger, crushed
- 1 tsp cumin and coriander powder
- 0.5 tsp Chili powder
- 0.25 tsp Turmeric powder
- 2 tsp Salt
- 4 tbsp Cooking oil
Whole Spices
- Coriander
- Cloves
- black cardamom
- Bay leaf
- Cardamom
- cinnamon stick
- black peppercorn
Finishing Touches
- 0.25 tsp garam masala
- Cilantro, handful, chopped
- achar
- kachumar salad

Directions

Preparation of Kidney Beans
1. Wash and soak the kidney beans overnight. Make sure there is enough water as beans will become 3x larger once soaked.
Preparing the Base
1. Add oil in your pan and once hot add the oil. When it’s hot add the onions.
2. Cook until translucent before adding in the garlic.
3. Sauté for a minute before adding in the ginger.
4. Then add sliced tomatoes with a little bit of water.
5. Cover and let it cook for 10 minutes. The steam will help with peeling off the skin.
Adding Spices and Beans
1. Discard the tomato skin and with the wooden spoon break down the meat of the tomatoes.
2. Now add the spices and cook until oil separates.
3. Time to add in the beans.
4. Add enough water as beans need to cook for 45 minutes. You can also use pressure cooker for faster cooking.
5. Before placing the lid, make a “bouquet garni” with the help of cheesecloth and placing all the whole spices in it.
Final Steps
1. Once the beans are cooked and tender, sprinkle garam masala and chopped cilantro.
2. Enjoy it with boiled rice, salad and achar!
