- 1 c Pumpkin Puree, not pumpkin pie filling
- 1 Large egg
- 0.75 c light brown sugar
- 0.25 c Oil
- 0.25 c Sour cream
- 1 tsp Vanilla extract
- 0.5 tbsp pumpkin pie spice
- 1 c All purpose flour
- 0.5 tsp Baking powder
- 0.5 tsp Baking soda
- 0.25 tsp Salt
Cream Cheese Filling
- 1 Large egg
- 4 oz Cream cheese, softened
- 0.25 c Granulated sugar
- 3 tbsp All purpose flour

1. Preheat oven to 350 and grease a 9x5 loaf pan.
Combining Ingredients
1. In a large bowl combine pumpkin, egg, brown sugar, oil, sour cream and vanilla extract.
2. Fold in the pumpkin spice, flour, baking powder, baking soda, salt just until just combined.
Preparing Cream Cheese Mixture
1. Whisk together 1 large egg, 4oz cream cheese, 1/4 cup sugar and 3tbsp of flour.
Assembling and Baking
1. Once the mixture is smooth add 2/3 of your pumpkin batter to the pan, then your cream cheese batter, then top with remaining pumpkin batter.
2. Bake for 50 minutes.
Post-Baking Instructions
1. Let cool in a pan then serve warm.
2. Keep refrigerated.
