- 75 grams Sugar
- 75 grams Dark brown sugar
- 0.5 tsp Salt
- 0.25 tsp Baking soda
- 0.75 tsp Cinnamon
- 1 tsp pumpkin spice
- 2 Eggs
- 150 ml Oil
- 213 grams pumpkin puree
Ingredients for Cream Cheese Icing
- 50 grams Butter, softened
- 80 grams Cream cheese, softened
- 250 grams Sugar
Biscoff crust
- 200 grams biscoff cookies
- 75 grams Butter, melted

1. whip the eggs with the sugar until the mixture is lighter in colour. Mix with the oil and pumpkin puree.
2. Sift the dry ingredients into the mixture and fold until it is just mixed through.
3. Scoop into parchment lined baking sheets with the biscoff mixture pressed at the bottom. Bake at 350F for 15-20 minutes. let rest and make the icing.
4. whip butter and cream cheese together until fluffy and pale. Mix in the icing sugar until it is all mixed in.
5. Decorate with the cream cheese icing and biscoff crumbs!
