For the sauce
- 1 Tbs Unsalted butter
- 1 tsp Olive oil
- 1 clove Garlic, finely chopped
- 0.25 Onion, finely chopped
- 0.25 cup Leek, sliced
- 0.25 cup Carrot, chopped
- 1 cup Tamarind pulp
- 1 cup Vegetable stock
- 2 Chipotle peppers, in adobo
For the pork
- 2 Tbs Vegetable oil
- 1 clove Garlic, crushed
- 1 Tbs Rosemary, finely chopped
- 4 slice Pork tenderloin, 140g each

For the tamarind sauce
1. Melt the butter with olive oil in a small pot and add the vegetables. Cook for 5 minutes while stirring constantly. Stir in the tamarind and chipotle. Pour the stock in. Simmer for 10 minutes or until it thickens and reduces in half.
2. Blend the sauce and strain it back into the pot. Bring to a boil once again. Keep warm.
For the pork
1. In a bowl, mix oil, garlic, salt and pepper. Coat the pork loins with this mixture and let rest for 10 minutes.
2. Heat up a grill and sear the pork slices for a few minutes on each side, until fully cooked.
3. Serve immediately, basted with tamarind sauce.
