Pork Loin
- 1 pork loin
- 0.5 Onion
- Flour
- 2 Eggs, 1 egg for end
- Panko breadcrumbs
- Oil
- 0.25 c water
- 0.5 tsp dashi
- 1 tsp Sugar
- 1 tbsp Soy sauce
- 1 tbsp Mirin

Preparing the Pork
1. Tenderize pork loin.
2. Season with salt and pepper.
3. Cut 1/2 onion into small pieces.
4. Beat an egg for the batter.
5. Coat pork in flour, egg, and panko.
6. Deep fry pork on medium high oil for 3 minutes then flip to the other side.
7. Cut it into 1/4 inch pieces.
Preparing the Broth
1. Put all ingredients for the broth in the pan and let it simmer.
2. Add pork on top and place lightly beaten egg on top of it. Cover.
Assembling the Dish
1. Assemble. Garnish with scallions! Enjoy!
