Ingredients

Strawberry Muffins
- 1 c Strawberries, diced
- 2 c Flour
- 1 tbsp Baking powder
- 0.5 tsp Baking soda
- 0.5 tsp Salt
- 1 tbsp Sugar
- 1 Butter, shredded or finely chopped
- 1 c Buttermilk
Icing
- 1 c Powdered sugar
- 2 tbsp Milk
- 0.5 tsp Vanilla extract

Directions

Preparation
1. Preheat the oven to 425.
2. Place the buttermilk and butter in the freezer for about 10 minutes. We need both to be very cold while mixing.
3. Chop the strawberries and lightly dust them with a pinch of sugar.
Mixing the Dough
1. Combine the dry ingredients in a large bowl.
2. Add the cold butter and incorporate it into the flour with your hands.
3. Stir in the buttermilk and strawberries until a wet sticky dough forms.
Working with the Dough
1. Flour your work surface and transfer the dough to it and gently knead. You may need to add a little flour to make it manageable but not too much. We want the dough to be a little wet.
2. Flour a rolling pin and roll out the dough, fold it a couple times, then roll it out to a rectangle about 1 inch thick.
Cutting and Baking the Biscuits
1. Add flour to the biscuit cutter (or cup) and press down on the dough to cut. Don’t twist.
2. Assemble the biscuits in a baking dish ensuring the sides touch. This will make sure they rise higher.
3. Brush with buttermilk and bake for 15 minutes. If you want them darker at the top, use the broil setting on your oven for a few minutes.
4. Serve immediately and enjoy.
