Ingredients

- 3 lbs Chicken thighs
- 2 tsp adobo
- 2 tbsp Avocado oil
- 4 tbsp sofrito
- 2 tsp sazón
- 2 tbsp Tomato paste
- 3 cups bone broth
- 0.75 cup diced potatoes
- 0.75 cup baby carrots
- 2 Bay leaves
- 10 pimento-stuffed olives

Directions

1. Season the meat with the adobo seasoning.
2. In a large pot, on medium heat, add the oil and sofrito. Stir until the sofrito releases its aroma.
3. Add the meat and cook for a few minutes until the outside of the meat starts to cook.
4. Add the sazón, tomato paste, bone broth or bouillon and water, potatoes, carrots, bay leaves and olives into the pot. Bring to a boil.
5. Lower the heat to a simmer and cook the stew for 40-50 minutes, uncovered, until the meat is cooked through.
6. Check the flavor and add salt and pepper to taste if needed.
7. Serve with rice of choice.
