- 1 clove Garlic, minced

- 0.5 c sake
- 0.5 c Soy sauce
- 0.5 c Sugar
Spicy Mayo
- mayo
- Sriracha
Toppings
- fried wontons
- Red onion
- Cilantro
- Green onion
- jalapeno
- Avocado
- Cucumber
Other Topping Ideas
- Sesame seeds
- furikake
- tobiko
- krab salad
- gochugaru
- crispy garlic

Directions for Poke Marinade
1. Make poke marinade by adding fish and all marinade ingredients in a bowl.
2. Cover and leave in the fridge until you’re ready.
Preparation of Fresh Veggies
1. Cut all fresh veggies and set to the side.
Preparation of Spicy Mayo
1. Make spicy Mayo. Add more sriracha if you like it spicy (I usually do). Taste as you go for the flavor you want.
Preparation of Eel Sauce
1. Make your eel sauce. In a small saucepan cook sake, soy sauce, and sugar for about 10 minutes. Let it cool down to thicken up.
Preparation of Wonton Chips
1. Cut diagonally into wonton wrappers and fry into chips.
2. Always add a little bit of salt to the chips after frying them.
Assembling the Nachos
1. Once the chips are done, assemble your nachos how you want and enjoy.
