Piadina Dough
- 3.5 cups all-purpose flour
- 0.5 teaspoon Baking soda
- 0.5 teaspoon Kosher salt
- 0.5 cup vegetable shortening
- 0.75 cup Warm water
- Olive oil, for brushing
- 3 Garlic cloves
- 2 tablespoons Pistachios
- 1.5 cups Fresh basil leaves
- 1 teaspoon Lemon zest
- 1 tablespoon Lemon juice
- salt and pepper
- 0.25 cup Parmesan
- 0.5 cup Olive oil
- 4 ounces burrata
- 8 ounces mortadella
- 0.25 cup Pistachios
- 0.5 cup Fresh basil leaves

For the dough
1. Combine flour, baking soda and salt.
2. Cut in lard or vegetable shortening until crumbly.
3. Stir in warm water until dough comes together.
4. Knead on work surface until smooth.
5. Cover and rest for 30 minutes.
For the pesto
1. Grind garlic and pistachios until a paste forms.
2. Add basil and grind until chopped.
3. Stir in lemon zest, lemon juice, salt, pepper, and parmesan.
4. Add in oil and grind until combined.
5. Set aside.
For the assembly
1. Cut the dough into 8 pieces.
2. Roll each piece into a circle about 1/4-inch thick.
3. Brush with olive oil and cook on a very hot cast iron or griddle until browned on both sides.
4. Fill with pesto, burrata, mortadella, chopped pistachios, olive oil and basil.
5. Fold over and enjoy.
