- 4 large egg whites
- 2 tsp cream of tartar
- 0.25 tsp Salt
- 1 c Sugar
- 0.5 tsp Vanilla extract
- 2 tsp Corn starch
Whipped Cream
- 1 c heavy whipping cream
- 2 tbsp icing sugar
- 1 tsp Vanilla extract
- star fruit
- passion fruit
- dragon fruit

Preparation of Meringue
1. Separate the egg whites from yolks. Make sure there is no yolk in whites or meringue will be flat due to the fat of the yolk.
2. Wipe your bowl and whisk with vinegar or lemon juice to ensure there is no fat residue left.
3. In a glass or metal bowl, add your separated egg whites, cream of tartar and salt.
4. Whisk for 30 seconds before start adding in the sugar in intervals. You want meringue to have straight peaks.
5. Now add vanilla extract and corn starch and mix it gently with a metal spoon (also wiped with lemon juice).
6. Now on a parchment paper lined sheet, dump all the meringue in the middle of your baking sheet and shape in a circle with an icing knife.
7. Make sure to create a hollow space in the middle of meringue to be filled with whipped cream.
8. Tip: While baking it shouldn’t change its color and should be completely dry to the touch. It should also be able to easily come off the parchment paper without sticking.
Baking Instructions
1. Preheat oven to 250F.
2. Bake it for 10 mins.
3. Turn oven down to 225F.
4. Bake for 1 hour 30 minutes.
5. Turn oven off and let the meringue cool down in the oven.
Decoration and Serving
1. Now decorate it with freshly whipped cream and fruits of your choice.
2. Serve immediately.
