- 1 Potato, julienne, small
- 0.5 c Carrots, julienne
- 1 Onion, sliced, small
- 1 c Baby spinach
- 1 c gram flour
- 1 tsp Salt
- 0.5 tsp Chili powder
- 0.25 tsp Turmeric powder
- 1 tbsp dry fenugreek leaves
- 1 tsp Cumin seeds
- 1 tsp ajwain (carom seeds)
- 1 tsp kalonji (black cumin)
- 1 tsp garam masala
- 0.25 tsp Baking soda
- 0.25 tsp Baking powder
- 0.333 c water
- 2 c Oil, to fry

Directions

Instructions
1. In a bowl add the vegetables, gram flour, dry herbs and spices.
2. Mix it and let it sit for 10 minutes. The reason is that veggies have their own juices which you need to let get absorbed by the gram flour otherwise the batter could be too runny.
3. Now add baking powder and soda.
4. Mix before pouring in the water.
5. Set it aside while the oil heats up.
6. You can ensure whether the oil is hot by placing a wooden spoon in the oil. If it bubbles then you can start frying.
7. Time to gently spoon small portions of pakora mix into the oil.
8. Cook 3-4 minutes on each side.
9. Once fried to perfection, place the pakora on a cookie sheet so it continues to stay crispy while cooling.
10. Serve it with Raita.
