Chicken Marinade
- 3 pounds Chicken breast, boneless skinless, cut into large chunks
- 0.5 c plain whole milk yogurt
- 0.25 c Lemon juice
- 0.25 c Olive oil
- 6 clove Garlic, minced
- 1 tbsp Tomato paste
- 1 tsp Paprika
- 0.75 tsp Cinnamon
- 0.5 tsp Oregano
- 0.5 tsp Ground ginger
- 1.25 tsp Salt
- 0.25 tsp Black pepper
- 1 c Rice
- 1 c vegetable or chicken broth

1. Place the chicken, yogurt, lemon juice, olive oil, garlic, tomato paste, paprika, cinnamon, oregano, ginger, salt and pepper in a large oven-safe baking dish.
2. Combine everything together and allow it to marinate in the fridge for at least 1 hour or up to 24 hours.
3. When ready to cook, preheat the oven to 375°F.
4. Add the rice and vegetable broth and toss to combine.
5. Cook covered with foil for 35 minutes.
6. Remove the foil, use a spoon to toss and return to the oven uncovered for 20-25 more minutes, or until all the liquid is absorbed and the chicken is golden.
7. Allow to rest for a few minutes, then serve with yogurt, if desired.
