- 1 Tbs Olive oil
- 2 Tbs Olive oil
- 1 Red bell pepper
- 1 lb Russet potatoes
- 12 oz Smoked Sausage

Directions

1. Preheat oven to 425F
2. Clean and pat dry Onions & Bell Pepper. Chop Onions & Bell Peppers and add to a bowl. Add in Olive Oil, Salt, Black Pepper, & Garlic Powder and mix well.
3. Clean and pat dry Chicken Thighs. Season with Salt, Black Pepper, Garlic Powder, & Italian Seasoning and mix well. Slice Smoked Sausage.
4. On a foil lined baking sheet, add all ingredients and evenly spread on baking sheet. Bake at 425F for 30 minutes uncovered, or until done.
