- 4 Yukon gold potatoes, medium
- 2 tbsp Butter
- 0.5 Onion, large, diced
- 3 Tomatoes, medium, diced
- 0.5 c Sour cream, or cream
- 2 tbsp Milk
- 1 tsp Salt
- 1 tsp granulated garlic
- 1 tbsp Apple cider vinegar

Preparing the Potatoes
1. Peel potatoes and dice into small cubes.
2. Add to a pot, fill with cold water, season with a large pinch of salt and bring to a simmer.
3. Cook for 12 to 15 minutes or just until fork tender.
4. Do not over boil.
5. Drain and set aside.
Cooking the Vegetables and Finalizing the Dish
1. Melt butter in a large skillet and add the onion and tomatoes.
2. Sauté until softened.
3. Add the potatoes and gently mix.
4. Stir in the sour cream, milk, 1 teaspoon salt, garlic, and apple cider vinegar.
5. Gently stir, trying not to break up the potatoes too much.
6. Cook over low heat until slightly thickened.
7. Serve and enjoy!
