Ingredients

- 6 Yukon gold potatoes, peeled and boiled
- 2 Fresh rosemary, bunch
- 1 Fresh thyme, bunch
- 1 Fresh sage, bunch
- 2 lb Ground beef
- 1 c frozen peas and carrots
- 12 oz beef stock
- 8 oz Beer
- 6 Garlic cloves, sliced thin
- 1 c Heavy cream
- 1 stick of butter
- 1 tbsp Better than Bouillon Beef Seasoning
- 1 Yellow onion, diced
- 2 tbsp Tomato paste

Directions

Making the potatoes
1. Peel and boil your mashed potatoes until you can easily pierce with a fork. Remove from water and thoroughly mash
2. Heat the cream and butter with a stalk of fresh rosemary until simmering. Simmer for a few minutes.
3. Add in the potatoes and mix. Adjust cream level if needed
4. Don't forget salt and pepper!
Pie Filling
1. Brown your beef until cooked. Remove and sautee the onions and garlic in the same pan. Add the beef back and season with salt and pepper.
2. Deglaze the pan with beer then add in the beef stock, tomato paste, and herb bundle.
3. cook until sauce thickens. If you want it thicker add a slurry of equal parts starch and water until desired thickness
Baking the pie
1. Add the filing to a baking dish. top with a thick layer of mashed potatoes
2. Bake at 400 uncovered for 20-25 minutes
3. Broil for 3 minutes
4. Let cool to reasonable temperature to its easier to serve
5. Plate and enjoy some serious comfort food!
