- 1 ciabatta, large
- 1 head of garlic
- 0.5 c Olive oil
- 2 c Cherry tomatoes, quartered
- 1 c black olives, roughly chopped
- 0.25 c Capers
- 1 Lemon, zest, organic
- 2 tbsp balsamic glaze
- 0.25 c Pistachios, coarsely chopped
- 0.25 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste
- 0.25 tsp Chili flakes, or to taste

Make the garlic confit
1. Place peeled garlic cloves in a small pot and cover them with olive oil.
2. Let them simmer at the lowest temperature on your stove for about 30 minutes until soft.
3. The garlic is not as strong anymore, so feel free to use all the garlic for a large ciabatta.
Prepare the topping
1. Combine cherry tomatoes, black olives, capers, salt, pepper, chili flakes, and olive oil (you can use the garlic-infused oil from the garlic confit) in a bowl.
2. Toast your bread and spread the garlic confit. Add the tomato mixture.
3. Top it off with grated lemon zest, balsamic glaze, and chopped pistachios for added flavor and texture.
