Ingredients

- 2 Tbs Olive oil
- 2 cup Oyster mushrooms, sliced
- 3 yellow potatoes
- 2 Carrots, sliced
- 1 clove Garlic, chopped
- 6 cup Vegetable stock
- 0.25 cup gallant soldier leaves (optional)
- 1 corn cob
- 1 sweet corn cob
- 2 Green onion, sliced diagonally

Directions

1. In a pot, heat the oil and add the mushrooms, potatoes, carrot, garlic and onion; stir well and cook for around 5 minutes. Pour in the vegetable stock until it covers all the ingredients. Bring to a boil and lower the heat to medium.
2. Simmer for 20 minutes or until the potatoes are softened.
3. Mash the potatoes lightly against the side of the pot so the stock thickens a bit. Add the gallant soldier leaves, corn and green onion.
4. Cook for 15 minutes and mash some potatoes to thicken before serving. Garnish with sliced avocado.
5. Share and enjoy.
