Pita and Vegetables
- 4 pita pockets
- 1 c Cherry tomatoes, halved
- 1 c pickled red onion
- 1 Cucumber, thinly sliced
- 2 tbsp chili sauce
Mushroom "Meat"
- 9 oz Oyster mushrooms
- 5 oz shiitake mushrooms
- 3 tbsp Olive oil
- 1 tbsp Maple syrup
- 2 tbsp Soy sauce
- 2 tsp Smoked paprika
- 2 tsp Ground cumin
- 1 tsp Turmeric
- 0.5 tsp Chili flakes, to taste
- 0.25 tsp Pepper, to taste
Herbed Yogurt Sauce
- 1 c plant-based yogurt
- 0.5 c Fresh parsley, chopped
- 0.5 c Fresh mint, chopped
- 0.5 Lemon, juiced
- 0.25 tsp Salt
- 0.25 tsp Pepper
- drizzle Olive oil

Preparing the mushrooms
1. Begin by cleaning and chopping or tearing the mushrooms.
2. Add them to a mixing bowl and marinate them with olive oil, maple syrup, soy sauce, and spices.
3. Pierce each mushroom onto a metal skewer and roast in the oven at 395 degrees F for about 30-40 minutes, until the mushrooms are tender and charred.
4. During the process, turn them around halfway through.
5. Hold the skewer straight up and slice it like traditional shawarma meat.
Preparing the herbed yogurt sauce
1. While the mushrooms are roasting, prepare the herbed yogurt sauce by mixing plant-based yogurt, fresh parsley, fresh mint, lemon juice, salt, pepper, and a drizzle of olive oil.
Assembling the shawarma
1. To assemble the shawarma, toast pita pockets and fill them with the roasted mushrooms, cherry tomatoes, pickled red onion, and thinly sliced cucumber.
2. Drizzle the herbed yogurt sauce and optional chili sauce on top, and enjoy!
