Preheat Oven
1. Preheat your oven to 375°F (190°C).
Prepare Peppers
1. Slice the mini peppers in half lengthwise and remove the seeds.
Cook Ground Bison
1. In a skillet over medium heat, cook the ground bison until browned and fully cooked.
2. Add taco seasoning and stir well to combine.
3. Then, add salsa and stir.
Stuff Peppers
1. Stuff each mini pepper half with the seasoned ground bison mixture.
Cheese Topping
1. Place the stuffed peppers on a baking sheet lined with parchment paper.
2. Sprinkle shredded cheddar cheese over the top of each stuffed pepper.
1. Bake in the preheated oven for about 12-15 minutes or until the cheese is melted and bubbly.
1. Remove from the oven and let them cool for a few minutes.
2. Serve the Taco Pepper Poppers with guacamole and Greek yogurt if desired.
