- 6 Tomatoes, roasted
- 0.5 Onion, chopped, roasted
- 2 clove Garlic, roasted
- 1 tsp chipotle chili adobo
- 4 cup Vegetable stock
- 1 Tbs Corn oil
- 1 200g pack noodles
- pinch salt and fresh black pepper
- 1 Avocado, cubed
- 0.25 cup Cilantro, washed and disinfected
- 0.5 Onion, sliced
- 2 Limes, in quarters

1. In a blender, blend the tomatoes, onion, garlic, adobo and vegetable stock until smooth and liquid.
2. Heat the oil in a pot and toast the noodles lightly, for around 2 minutes. Pour the blend in and let it boil. Salt and pepper to taste. Cook for 10 minutes or until the noodle softens.
3. Serve in bowls and dress with avocado, cilantro and sliced onion. Accompany with lime.
4. Enjoy.
