- 1 ciabatta
- 1 Eggplant
- 1 bell pepper
- 1 garlic head
- 0.5 c Parsley leaves, stems removed, roughly chopped
- 0.25 Red onion, thinly sliced
- 2 tbsp Mustard
- 1 Lemon, juiced
- 1 tsp Salt
- 0.25 tsp Pepper

Preparation of Ingredients
1. Start by thinly slicing the red onion and marinating in lemon juice and salt (if this is done a day ahead, they will become very pink).
2. Slice the eggplant lengthwise and sprinkle with salt.
3. After 10 minutes, press down with a kitchen paper towel to remove the moisture.
4. Chop the tip of the garlic head off.
5. Put the bell pepper, sliced eggplant, and garlic head on a lined baking tray and drizzle with olive oil.
6. Roast for about 30 minutes at 395 degrees F until the skin of the bell pepper has blackened and the eggplant slices are juicy and soft.
7. Let the veggies cool.
Assembling the Sandwich
1. Once the veggies are cool, peel the skin off the bell pepper and remove the core.
2. Squeeze out the roasted garlic.
3. Toast the bread and spread one side with the roasted garlic and the other with mustard.
4. Layer the sandwich with eggplant, bell pepper, parsley, and red onion.
5. Enjoy!
