Ingredients

Meatloaf
- 2 lb Ground beef
- 1 lb Ground pork, lamb if you can find it
- 1 Carrot, grated
- 1 Celery stalks, finely diced
- 2 Shallots, finely diced
- 6 Garlic cloves, grated
- 0.333 c Fresh sage, chopped
- 3 Eggs
- 0.333 c Peanut butter
- 0.333 c Milk
- 1 c Bread crumbs
- 0.333 c Tomato paste
- Salt, to taste
- Pepper, to taste
Apricot BBQ Sauce
- 1 c apricot juice
- 1.5 c Ketchup
- 0.25 c Worcestershire sauce
- 0.25 c Brown sugar
- 0.25 c Molasses
- 0.25 c liquid smoke
- 0.25 c Hot sauce, yellowbird ghost pepper if you can get

Directions

Making the Meatloaf
1. Sweat your vegetables for 2-3 minutes over medium heat just until soft
2. In a large mixing bowl, whisk 3 eggs and add milk, breadcrumbs, sage, and peanut butter. stir to combine into a paste
3. Add in vegetables and the beef, pork, and tomato paste. Season with salt and pepper then knead until mixed very well
4. Pack a loaf pan very tightly with the mixture and let sit for about 15 minutes. Turn over onto a sheet tray lined with aluminum foil
5. Bake uncovered for 15 minutes
6. During this time, combine the bbq sauce ingredients in a small sauce pan over medium heat. Whisk to combine and simmer until the oven timer goes off.
7. Take the meatloaf out and add a generous layer of bbq sauce over every inch of the meatloaf. Put back in the oven for another 15 minutes. Remove and glaze.
8. Back in the oven for 25 minutes. Remove and glaze.
9. Back in the oven set to broil for 5 minutes. Remove and glaze one more time. Let it rest for 10-15 minutes..
10. Slice and serve garnished with fresh sage and optional fresh mint. ENJOY
