Cookie Dough
- 1 c salted butter
- 1.25 c Granulated sugar
- 1 Egg
- 2 tsp Pure vanilla extract
- 2.5 c gluten free flour
- 0.5 tsp Baking soda
- 0.5 tsp Baking powder
- 0.25 tsp pink Himalayan salt
- 1 c white chocolate chips
- 1 c Lucky Charms marshmallows
- 0.5 c Lucky Charms marshmallows
- 0.25 c white chocolate chips

1. Preheat your oven to 350 degrees.
2. Place parchment paper on your cookie sheets and set aside.
Creating the Cookie Dough
1. In your stand mixer using the paddle attachment, cream together softened butter and sugar.
2. After about a minute on medium speed, stop and use a spatula to push down the sides and continue to stir on medium high until light and fluffy.
3. Add egg and vanilla and mix on medium until combined well.
4. Add gluten free flour, baking soda, baking powder, and pink Himalayan salt.
5. Stir on low until combined and mix on medium for only about 15 seconds.
6. Fold in the white chocolate chips and Lucky Charms marshmallows.
Forming and Baking the Cookies
1. Using a 2 tbsp cookie scoop, place cookies on prepared cookie sheets 2-3 inches apart.
2. Bake for 9-12 minutes - do not overcook.
3. Pull cookies out of the oven and immediately push marshmallows and white chocolate chips into the tops of the cookies.
