- 2 cup Mushrooms, in quarters
- 1 Tbs Olive oil
- 1 tsp Garlic powder
- 1 tsp Thyme leaves
- pinch salt and fresh black pepper
- 0.5 cup Butter
- 0.5 cup wheat flour + 2 tbsp to batter
- 1 cup Milk
- 1 Egg, beaten
- 1 cup Breadcrumbs

1. In a bowl, mix the mushrooms with olive oil, garlic, thyme, salt and pepper.
2. Transfer to a baking tray and bake for 20 minutes or until roasted. Let them chill and lightly chop.
3. In a small pot, melt the butter and add the flour. Cook while stirring continuously to prevent the flour from over-cooking. Pour in the milk and whisk to prevent lumps. Cook at low heat for around 10 minutes or until it thickens. Add the chopped mushrooms and transfer to a tray. Refrigerate for at least 4 hours.
4. Oil your hands and form the croquettes. Coat each croquette with flour, then with eggs and breadcrumbs. Spray a pan with oil and cook for 2 minutes each side or until golden. Turn constantly to achieve an even color.
5. Share and enjoy.
