- 4 lbs chuck roast
- 2 cloves Garlic, minced
- 0.5 Onion, diced
- 2 ribs Celery, fine diced
- 1 quart beef stock
- 1 c Red wine
- 2 tbs Tomato paste
- salt and pepper
Mashed Potatoes
- 2 lbs Yukon gold potatoes
- 4 tbs Butter
- 1 c Heavy cream
- salt and pepper, to taste

roast instructions
1. Brown your roast on both sides then remove from the pan.
2. Add a little oil and then your celery and onions.
3. Cook until soft then add your tomato paste and garlic.
4. Cook around 1 minute and then add your wine.
5. Cook for 30 seconds and add your roast back to the pan.
6. Add your beef stock, cover, and place in an oven set to 250F for 3-4 hours.
7. Once done, shred with 2 forks.
Instructions for Mashed Potatoes
1. Peel and boil potatoes until fork tender.
2. Run through a potato ricer while you warm the cream and butter in a pot.
3. Add a little at a time until you reach the desired consistency.
4. Season with salt and pepper to taste.
Instructions for Gravy
1. Strain the drippings from the roast pan and add corn starch to thicken.
2. Add this over your roast and potatoes and garnish with chives or parsley.
