- 2 bread slices
- 1 tsp Oil
- 1 Shallot, diced
- 1 Red pepper, sliced
- 4 oz ground sausage
- 0.25 tsp White pepper
- 0.25 tsp Cayenne pepper, optional
- 0.5 c Monterey Jack
- 0.5 c Sharp cheddar, shredded

Preparing the Sausage and Pepper
1. Add oil to a skillet and add shallot and red pepper. Cook until the shallot turns translucent.
2. Add the ground sausage and cook for 5 minutes until fully cooked.
3. Season with white pepper and cayenne pepper. Mix well.
Preparing the Cheese
1. For the cheese, I recommend using block cheese. Shred Monterey jack and sharp cheddar with a cheese grater and combine. Toss well with a spoon.
Assembling the Sandwich
1. Use your favorite loaf of bread or sliced bread. Spread butter evenly only onto one side of the bread.
2. Turn it over and add 1/2 of the cheese mix, followed by cooked sausage pepper and the remaining cheese mix. Place the other slice of bread on top.
Grilling the Sandwich
1. Transfer it to a cold skillet and turn the heat to medium-low. Cook for about 5 minutes or until the bottom side turns golden brown.
2. Spread butter onto the top side. Flip it over and continue cooking until the bottom turns golden brown and the cheese is melted.
3. Serve immediately and enjoy!
