- 1 halloumi block
- 1 can chickpeas
- 1 tsp za'atar
- pinch Salt
- pinch Black pepper
- 0.25 tsp Paprika
- 0.25 tsp Garlic powder
- 1 tbsp Oil
- 1 pack or small jar of sun dried tomatoes
- 1.25 cups Cucumber, diced
- 0.25 c Dill, finely chopped
- 1 Lemon, juiced
- 1 tbsp Olive oil
- 0.5 Small red onion, finely chopped
- pinch salt/pepper

- 6 taco shells
- hummus

1. Preheat oven to 425 degrees.
2. Add chickpeas and halloumi to a sheet pan lined with parchment paper.
3. Toss in oil and spices.
4. Bake for 25-35 minutes, until chickpeas and halloumi are crisp.
Preparing the Salsa
1. Add all salsa ingredients to a bowl and mix together.
Assembling the Tacos
1. Spread an even layer of hummus on each taco shell.
2. Top with chickpea and halloumi mixture and salsa.
3. Dig in and enjoy.
