Shrimp Recipe
- 20 colossal shrimp
- 2 tbsp Unsalted butter, melted
- 1 stick Unsalted butter, melted
- 6 clove Garlic, minced
- 1 c white panko breadcrumbs
- 2 tbsp lemon pepper seasoning
- 0.5 c Parmesan cheese, grated
- 0.5 Shallot, diced
- 0.5 c White wine, pinot grigio or sauvignon blanc
- 1 Lemon, juiced
- 0.25 c Fresh parsley, chopped

1. Preheat your oven to 425 degrees.
2. In a large kitchen bowl, combine the colossal shrimp, 2 tablespoons of melted unsalted butter, and the minced garlic cloves.
3. Mix until the shrimp are thoroughly coated, and then set this bowl aside.
4. In another large kitchen bowl, combine 1 cup of panko breadcrumbs (or homemade breadcrumbs), 2 tablespoons of lemon pepper seasoning, and 1/2 cup of grated Parmesan cheese.
5. Mix these ingredients together and set the bowl aside.
1. In a large skillet over medium heat, add the 1 stick of already melted unsalted butter, then add the diced shallot and cook until it becomes fragrant, which should take about a minute.
2. Pour in 1/2 cup of white wine to deglaze the pan.
3. Allow the wine to reduce by about 1/4, and then turn off the heat.
4. Add the coated colossal shrimp to the skillet, making sure they are in an even layer.
5. Sprinkle the shrimp with 1/2 to 3/4 of the breadcrumb mixture, depending on your desired amount.
6. Transfer the skillet to the preheated oven and bake for about 8 minutes or until the shrimp turn pink and the breadcrumbs become golden and crispy.
1. Once done, squeeze the juice of one lemon over the shrimp scampi and garnish with chopped parsley.
