Bulgogi Tacos
- 1 c Kimchi
- 0.75 lb rib-eye
- 1 spicy bulgogi @omsom packet
- 2 tortillas
- Cheese, of your choice
- Scallions, for garnish

Prepare the Kimchi and Meat
1. Cut your kimchi into small pieces and squeeze out any kimchi juice. This is so your tortilla doesn’t get soggy later on.
2. Marinate your meat with the Omsom flavor packet or any bulgogi marinade for 15 minutes or overnight for a richer flavor.
Cook the Ingredients
1. Fry the kimchi and set aside.
2. Cook the bulgogi and set aside.
Assemble the Quesadilla
1. Warm up your tortilla on the pan.
2. Add your cheese and cover with a lid until cheese melts.
3. Start adding back in your kimchi and bulgogi to one side of the tortilla.
4. Fold tortilla halfway and flip.
5. Cut quesadilla into thirds.
Garnish and Serve
1. Garnish with scallions and enjoy. This definitely would’ve tasted good with a kimchi juice Kewpie mayo sauce which I’ll try when I make it again!
