- 1.5 c Mozzarella cheese, shredded
- 2 oz Cream cheese, full fat
- 1 Large Egg
- 1.25 c Almond flour
- 1 tsp Baking soda, or 1 tbsp of baking powder
- 1 tbsp Oat Fiber
- 1 tbsp everything bagel spice, or any topping of your choice

Preparing the Dough
1. Place the mozzarella cheese and cream cheese in a microwave safe bowl.
2. Microwave for 30 seconds at a time stirring in-between until melted.
3. Scrape the cheese into a food processor with the egg and process until smooth.
4. Add the dry ingredients to the food processor until a sticky dough forms.
5. Pour the dough into a piece of cling film and put it in the freezer while the oven preheats.
Preheating the Oven
1. Preheat the oven to 400℉ and line a baking sheet with parchment paper.
Forming and Baking the Bagels
1. When oven is ready, remove dough from freezer and divide dough into 6 separate pieces (4 pieces for larger bagels).
2. Roll each portion and form into a ring.
3. Put pieces onto parchment paper and add your preferred toppings.
4. Bake for 15 minutes or until the top is browned.
Post-Baking Instructions
1. Let them cool before slicing. NOTE: They will lose a little bit of their air and flatten a little bit but they are still delicious!
2. Keep them in the fridge in an airtight container. They also freeze well.
