For the salmon
- 3 Tbs Olive oil
- 3 Tbs Fennel, washed and disinfected
- 1 dried árbol pepper
- 2 morita peppers
- pinch salt flower and fresh black pepper
- 1 salmon loin with skin, approximately 450g
To serve
- 2 slice Pineapple, sliced lengthwise
- 0.5 dill bulb
- 1 cup dried cranberry
- 1 Tbs Olive oil
- pinch salt and fresh black pepper

For the salmon
1. In a bowl mix the olive oil, fennel, chilies, salt and pepper until fully incorporated. Coat the salmon with this mixture and rest in the fridge for one hour.
2. Heat up a grill, lightly drizzle with oil and lay the salmon, skin-side down first. Cook for 5 minutes or until the skin is crispy, then flip. Cook for 2 more minutes and place to the side.
To serve
1. Grill the pineapple slices until they are caramelized and grill marked. Dice them and place in a bowl with fennel, dried cranberries, olive oil, salt and pepper. Mix to incorporate.
2. Serve the salmon with this salad.
3. Share and enjoy.
