1. Preheat your smoker to 250 degrees, set up for indirect heat.
2. Starting with the meat side down, lightly but evenly coat the ribs with Accent then cover evenly with a beef rub of your choosing. Turn over and repeat on the meat side. Leave to rest on the counter for 25-30 minutes.
3. After resting on the counter, the ribs should glisten slightly. That's how you know they are ready for their smoke bath! Place in the smoker and plump them up before closing the lid.
4. We are looking for "probe tenderness" here, after about 5 hours start checking them. Poke an instant read thermometer into the meat, if the probe falls in with little to no resistance they are ready. If they have a slight tug, let them continue to cook until the probe easily penetrates.
5. Shut down the smoker and pull the ribs to let rest for 10-15 minutes before slicing. Serve hot and enjoy!
