Ingredients

- 4 Chicken thighs
- 2 lb Jumbo shrimp, peeled, cleaned, and deveined
- 4 andouille sausages
- 0.25 cup white cooking wine
- 3 Tbs Unsalted butter
- 0.5 Yellow onion, diced
- 1 cup Celery, diced
- 1 Red bell pepper, diced
- 1 cup Green onions, chopped
- 4 Garlic cloves, minced
- 1 Tbs Kosher salt
- 1 Tbs Black pepper
- 2 Tbs Garlic powder
- 2 Tbs Onion powder
- 1 Tbs Cayenne pepper
- 1 Tbs cajun seasoning
- 1 can Tomatoes, diced
- 2 cup jasmine rice
- 4 cup Chicken stock

Directions

1. Preheat your oven to 350 degrees.
2. Combine all of the seasonings and divide into two small bowls. Set aside.
3. Season your chicken thighs with one of the bowls of seasoning
4. Sear your chicken thighs in a hot oiled pan on medium heat for 3-4 minutes per side.
5. Put the chicken in your oven and heat for 10 minutes.
6. Once the chicken is fully cooked, let it rest, then chop into small pieces.
7. In a separate pan, add oil and cook your andouille sausages until you develop a crust on both sides.
8. Remove the sausages from the pan and put aside for later.
9. Deglaze the pan with white wine and butter.
10. Add the onions, peppers, garlic, celery, green onion, and half of the seasonings.
11. Add the chicken, diced tomatoes, and sausages to the pan and mix. Set aside.
12. In a large shallow pot, add the jambalaya mixture, plus the rice (make sure your rice is rinsed and cleaned of any starch).
13. Add the chicken stock until it barely covers the ingredients.
14. Add the remaining seasonings.
15. Cover and simmer on medium low heat for about 20-25 minutes.
16. Serve immediately!
