Ingredients

- 226 g 00 flour
- 2 Eggs
- 2 tsp Olive oil
- 2 tsp water, more if needed
- 1 tsp Salt

Directions

1. Measure out flour, add salt mix well.
2. Place dough on a floured surface & make a well.
3. Add 2 eggs into the well & oil. Then slowly mix together with a fork.
4. Add water & keep mixing until a loose mass forms. Add more water if the dough is too dry.
5. Knead dough until the texture is smooth and elastic.
6. Gather the dough into a ball, cover and let it rest at room temperature for at least an hour.
7. When the dough is ready, cut it in half, add some flour on top & roll out the dough. If you have a pasta machine, use that. But I used a rolling pin.
8. When rolling out the dough, start from the center going out. Use a back & forth motion.
9. Roll out your dough until you can see your hand through the other side.
10. Cut pasta to your liking & enjoy!
11. Fresh pasta cook time is 1 minute, no longer than that.
