Ingredients

Churros
- 1 c Water
- 6 tbsp Butter
- 1 tbsp Granulated sugar
- 1 tsp Vanilla extract
- 0.5 tsp Salt
- 1 c All purpose flour
- 2 Eggs
- Peanut Oil, for frying
Cinnamon sugar
- 0.25 c Granulated sugar
- 0.5 tsp Ground cinnamon
- 1 tbsp freeze dried strawberries, optional

Directions

1. In a large saucepan over medium heat, add water, butter, sugar, vanilla and salt. Bring to a boil. Then turn off heat, add flour and stir with a wooden spoon until thickened. Allow dough to cool for 10 minutes.
2. Add eggs one at a time, beat in with hand mixer or whisk. Transfer dough to a piping bag with a large star tip.
3. In a large pot over medium heat, add enough oil to fill halfway. Heat oil to 375 degrees. Carefully pipe the churros into the oil, about 4 inches in length. Use kitchen scissors to cut the dough from the piping bag.
4. Fry until golden brown, about 4-5 minutes, turning every 1-2 minutes. Cook in batches of 3-4 churros at a time.
5. Remove churros with tongs and roll in cinnamon sugar. Place on cooling rack.
