- 1 tbsp Unsalted butter
- 1 large tortilla
- 2 Large eggs
- 1 tsp whole milk, or heavy cream
- 2 tbsp shredded cheese, of choice
- Salt, to taste
- Black pepper, to taste
- 1 tsp Olive oil
- 1 tsp chili crisp oil
- pickled onions
- thinly sliced avocado
- cooked bacon
- Scallions, for garnishing
- fresh chives or parsley

Directions

Prepare the tortilla
1. In a large nonstick skillet over medium high heat, melt half of the butter.
2. Add the tortilla to warm, about 30 seconds on each side.
3. Remove and set aside.
Prepare the eggs
1. In a small bowl, whisk the eggs and milk until smooth.
2. Season with salt and black pepper to taste.
Scramble the eggs
1. Reduce the skillet to medium heat and add the eggs to soft scramble, using a spatula to help it stay the size of the tortilla.
2. Once halfway cooked, add the tortilla to finish cooking another 1 minute.
3. If needed, use a plate to help flip the egg-tortilla over.
Add the toppings
1. Add the shredded cheese on top of the egg.
2. Drizzle the olive oil around the tortilla to continue cooking until crispy and cheese is melted.
Serve
1. Transfer to a serving plate to garnish with chili crisp oil, crispy bacon, thinly sliced avocado, pickled onions, scallions, and chives to enjoy warm!
