- 2 lbs bone-in skin-on chicken thighs
- 0.5 oz Ginger, minced
- 1 oz Ginger, sliced
- 5 scallions
- 4 clove Garlic, minced
- 8 cups water or broth
- 2 tsp salt
- 1 c jasmine rice
- 2 c reserved broth

1. In a pan, add some oil and sauté ginger and scallions until fragrant.
2. Add in your broth or water, salt, and bring to a boil.
3. Add in your chicken and bring back to a boil. Reduce to a simmer.
4. Cook for 15-20 minutes or until internal temp reaches 165F.
5. Remove the chicken and place in an ice bath to stop the cooking.
6. Remove any “scum” or grayish impurities from the broth.
7. Remove the ginger and scallions from the broth and discard.
8. Reserve 2 cups of broth for the rice and serve the rest of the broth as a side.
9. In another pan, sauté the minced garlic and ginger.
10. Add in your washed rice and sauté briefly.
11. Add in 2 cups of the reserved chicken broth and bring to a boil. Then reduce to a simmer and cover for about 15 minutes or until all the broth has been absorbed.
12. Enjoy your Hainanese chicken and rice with a side of broth, cucumbers, sweet soy sauce, and ginger scallion oil.
