For the octopus
- 1 octopus, cleaned and pre-cooked
- 2 Tbs Olive oil
- 4 clove Garlic, finely diced
- 1 Tbs Paprika
- 1 Tbs pepper puree, ancho
For the sauce
- 2 Tbs Unsalted butter
- 1 Shallot, finely diced
- 0.5 cup Sunflower seeds
- 6 Green onion stems, in diagonal slices
- 1.5 cup tangerine juice, with pulp
- 1 tsp Honey
- pinch salt and pepper, fresh black
To serve
- 2 cup Chickpeas, puree or hummus

For the octopus
1. Pre-heat your grill.
2. Place the octopus in a bowl, add olive oil, garlic, paprika and ancho pepper. Mix well and grill until browned.
3. Keep warm to the side.
For the sauce
1. Melt the butter in a pan, sautee the shallot with the sunflower seeds until it becomes fragrant.
2. Stir in the green onion stems and cook with the rest of the ingredients for a minute. Add the tangerine juice, honey, salt and pepper. Mix and cook until it reduces lightly.
To serve
1. Spread a tbsp of chickpea puree in a small bowl, place some octopus on top and drizzle with some tangerine sauce.
1. To make the chickpea puree, blend pre-cooked or canned chickpeas with some chicken stock, salt and fresh black pepper.
