- 1 package Gnocchi
- 4 dino kale leaves
- 0.25 c Pumpkin seeds
- 0.25 c Cashews
- 0.5 c Parsley
- 0.5 c Basil
- 1 clove Garlic
- 0.25 c Nutritional yeast
- 0.25 c Extra virgin olive oil, or as needed
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 1 c kale chips

Prepare the gnocchi
1. Prepare the gnocchi according to the package instructions.
2. Rinse, drain, and set aside.
For the pesto
1. Dry-roast the pumpkin seeds and cashews until lightly colored.
2. Let cool.
3. In a food processor, blend the nuts and seeds.
4. Now add the roughly chopped kale, the fresh herbs, garlic, nutritional yeast, salt, and pepper.
5. Process while gradually streaming in the olive oil until you have reached your desired consistency.
For the final dish
1. Heat olive oil in a pan and roast the gnocchi briefly.
2. Then, toss the gnocchi with the pesto until evenly coated.
3. Garnish with more nutritional yeast and cracked pepper.
4. To add some extra texture and crunch, you can also top the dish with some kale chips.
