Ingredients

Stovetop Peaches
- 8 peaches
- 0.25 c brown sugar
- 1 Lemon, juiced
- 0.5 tsp ground cinnamon
Vanilla Cake Batter
- 1 c flour
- 0.25 c granulated cane sugar
- 1 tsp baking powder
- 0.5 tsp fine sea salt
- 5 tbsp butter
- 0.25 c Buttermilk, or whole milk
- 0.333 c boiling water
- 2 tbsp Brown sugar, or more granulated cane sugar, topping
- vanilla bean ice cream

Directions

Preparation
1. Preheat oven to 425F.
2. Lightly butter a 9" pie pan along the edges.
Stovetop Peaches
1. Combine the peach slices, brown sugar, lemon juice, and ground cinnamon in a large saucepan over medium high heat.
2. Stir to combine.
3. Add 3-4 tbsp. of water to help de-glaze the pan.
4. Cover with the lid and cook for 5-6 minutes, stirring occasionally to keep from burning.
Vanilla Cake Batter
1. In a large bowl, mix the flour, sugar, baking powder, and salt.
2. Add the melted butter, buttermilk, and boiling water.
3. Stir just until combined.
4. If needed, add 1-2 tbsp. more hot water until cake batter-like texture.
Assembly
1. Transfer the juicy peaches to the prepared pie pan.
2. Scoop the cake batter on top of the peaches.
3. Gently use a spoon to lightly swirl some of cake batter into the peaches.
4. Sprinkle with the remaining sugar for topping.
5. Bake 20-30 minutes, until golden on top and a toothpick inserted into the cake batter comes out with just moist crumbs.
Serving
1. Enjoy warm with vanilla bean ice cream!
