- 8 oz glass noodles
- 0.5 lb Shrimp, medium-sized, peeled and deveined
- 2 tbsp Oil
- 3 clove Garlic, minced
- 1 inch Fresh ginger, minced
- 2 cups Baby spinach, or other leafy greens
- 3 tbsp Coconut aminos
- 2 tbsp Oyster sauce
- splash Lime juice
- 1 tbsp Fish sauce, optional
- 1 tbsp Sesame oil
- Green onions, for garnish
- Sesame seeds, for garnish
- fresh thai basil

1. Soak glass noodles in warm water for 10-15 minutes or cook according to package. Drain.
2. Cook shrimp in 1 tbsp oil and until pink. Set aside.
3. Sauté garlic and ginger in 1 tbsp oil.
4. Add spinach, stir-fry until wilted.
5. Mix in glass noodles.
6. Pour coconut aminos, oyster sauce, and fish sauce (if using).
7. Add shrimp, toss together.
8. Drizzle sesame oil.
9. Garnish with green onions, sesame seeds, and basil.
10. Serve and enjoy!
