- 0.5 lb shell pasta
- 0.25 c Olive oil
- 0.5 small red onion or shallot
- 2 clove Garlic, minced
- 0.25 c Tomato paste
- 1 tbsp Vodka
- 0.5 c Heavy cream
- 1 tsp Red pepper flakes, or to taste
- 2 tbsp Butter
- 0.25 c Parmesan cheese, + more to taste
- sea salt, to taste
- Pepper, to taste
- Basil, chopped to taste

1. Cook pasta to al dente according to package instructions.
2. Reserve 1 cup of the cooking liquid before draining (you may not use the entire cup).
3. Meanwhile, over medium heat, add olive oil to a large pan and the onion.
4. Cook until the onion turns translucent, then add the garlic.
5. Cook until the garlic is fragrant, stirring often so the garlic doesn't burn.
6. Add tomato paste and cook for 2-3 minutes stirring often, until the paste turns a darker, rustier color.
7. Add vodka and cook for 1 minute.
8. Add heavy cream and red pepper flakes.
9. Cook for 1-2 minutes, stirring until combined and the sauce thickens.
10. Add in your pasta and butter.
11. Slowly add in pasta water until sauce reaches your preferred thickness.
12. You want all the pasta to be covered in sauce, but not overly liquidy.
13. Stir in Parmesan cheese.
14. Season with salt and pepper to taste.
15. Sprinkle with basil and serve immediately.
