Ingredients

Gazpacho
- 4 Tomatoes, ripe, roughly chopped
- 1 Cucumber, small, peeled
- 1 Red bell pepper, roughly chopped
- 0.25 Red onion, finely diced
- 0.25 Baguette, from the day before, roughly chopped
- 1 clove Garlic, finely diced
- 0.25 c Olive oil
- 2 tbsp sherry vinegar
- 1 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
Garnish
- 2 tbsp Olive oil
- 0.5 c Basil leaves, chiffonade cut
- 0.5 Green bell pepper, finely diced into cubes
- 2 tbsp Red onion, finely diced into cubes
- 0.5 c croutons

Directions

Prepping the veggies
1. Combine tomatoes, bell pepper, cucumber, red onion, garlic, and the bread chunks in a large bowl with salt, pepper, sherry vinegar, and olive oil.
2. Firmly press down with a plate, add some weight to it, and let marinate for as long as possible (or overnight).
Blending and chilling
1. Add all ingredients to a blender and blend for about a minute until you have reached a creamy consistency.
2. Chill until you are ready to enjoy.
Garnishing
1. Garnish with fresh basil, bell pepper, red onion, and croutons, and drizzle with olive oil.
