- 1 Carrot, chopped
- Chinese five spice, optional, to taste
- 0.5 cup Dried peas, cooked
- 1 Egg, beaten
- 2 clove Garlic, chopped
- 2 Tbs Ginger, chopped
- 2 Green onions, sliced including the stem
- 3 Tbs Oil
- 0.5 cup snow peas, halved
- 2 Tbs Soy sauce
- 2 cup White rice, cooked one day earlier

1. Heat the oil in a large pan or wok and add the onion, garlic and ginger; cook for a few minutes or until they soften.
2. Stir in the carrot, snow peas and cook until they turn a bright color. Add the rice and fry until it starts to brown. Push the rice to the side of the pan and pour the egg in.
3. Let it cook and incorporate with the rice. Add the soy sauce, dried peas, and sprinkle with Chinese five spice to taste. Mix well and cook for one more minute.
4. Serve immediately in bowls.

1. Fried rice appears to take advantage of day-old rice. It’s best to use a day-old rice as it’s drier and it prevents it from becoming mushy while frying, achieving the perfect consistency.
