- 2 large cucumbers

- Pepper, for seasoning
Mashed Potatoes
- 4 Potatoes, medium-sized, peeled and diced
- 0.5 c Milk
- 2 tbsp Butter
- salt and pepper, to taste
- 0.5 c Parmesan, grated
Fried Chicken Strips
- 1 lb Chicken breast, thinly sliced
- 1 c all-purpose flour
- 2 Eggs, beaten
- 1 c Breadcrumbs
- salt and pepper, to taste
- Cooking oil, for frying

Mashed Potatoes
1. Boil the peeled and diced potatoes until fork-tender. Drain.
2. Mash the potatoes, adding milk, butter, parmesan, salt, and pepper. Mix until smooth and creamy. Set aside.
Fried Chicken Strips
1. Season the chicken slices with salt and pepper.
2. Dredge each chicken strip in flour, dip in beaten eggs, and coat with breadcrumbs.
3. Heat oil in a pan and fry the chicken strips until golden brown and cooked through. Drain on paper towels.
Cucumber Roll-Ups
1. Wash the cucumbers thoroughly and peel them into thin slices using a peeler.
