- 8 slice brioche bread
- 2 Large eggs
- 1 cup half and half
- 1 cup Heavy cream
- 3 Bananas, cut into slices
- 4 Tbs Butter
- 1 tsp Kosher salt
- 1 cup Brown sugar
- 1 cup Granulated sugar
- 1 Tbs miso paste
- 2 Tbs Crown Royal Peach Whiskey
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 2 tsp Vanilla bean paste, or extract
- 2 Cinnamon sticks
- 2 Star anise
- 2 Tbs Vegetable oil

1. In a large bowl, add eggs, half and half, heavy cream, cinnamon, nutmeg, kosher salt, vanilla bean paste (or extract) and granulated sugar to form a custard.
2. Mix until well combined.
3. In a large pan, add oil butter and let it melt.
4. Dip your brioche bread into the custard.
5. Once the pan gets hot, add your bread to the pan and cook on both sides for about 3-5 minutes until golden brown.
6. In a separate pan, add butter to the pan and let it melt.
7. Add brown sugar and mix until the sugar dissolves.
8. Add miso paste, cinnamon sticks, star anise, and crown royal.
9. Once it all comes together, remove the cinnamon sticks and star anise.
10. Add your bananas and let them caramelize in the mixture.
11. Serve over the brioche french toast.
12. Garnish with powdered sugar (optional) and enjoy!
