Spaghetti and Mussels
- 0.5 lb Spaghetti
- 3 cans scout mussels
- 2 tbsp Unsalted butter
- 1.5 c Fennel, thinly sliced
- 1 Shallot, medium sized, minced
- 3 clove Garlic, minced
- 1 serrano pepper
- 0.333 c White wine, dry
- 0.5 tbsp Fish sauce
- 1 tbsp Soy sauce
- salt and pepper, to taste
- 0.25 c Fresh parsley, minced
- 2 tbsp Lemon juice
- 0.25 c Parmesan, grated
- Extra virgin olive oil, for garnish
- fennel sprigs

Preparation of Ingredients
1. Caramelize fennel in butter in a large pan over medium-high heat and a sprinkle of salt (about 5-8 minutes).
2. Add shallots and cook for about 1 minute.
3. Add garlic and cook for about 1 minute.
4. Add in canned mussels, serrano, soy sauce, fish sauce, and white wine.
5. Stir for 2-3 minutes.
Adding Pasta and Final Touches
1. Add your pasta along with parsley and lemon juice, stirring vigorously for about a minute.
2. Add cheese and salt and pepper to taste.
3. Garnish with fennel sprigs and a dash of extra virgin olive oil.
