- 2 Onions, sliced
- 1 c Mushrooms, diced
- 1 tsp vinegar
- 0.25 c olives
- 4 Bay leaves
- 1 tsp peppercorns
- 1 tsp Garlic, minced
- adobo

Directions for Preparing Plantains
1. Cut the corners of the plantains.
2. Slice the peel through the middle.
3. In a large pot full of water, boil the plantains for 20 minutes or until softened.
4. Drain and let cool with running cold water.
5. Remove the peel and slice in circles.
Preparing the Pickled Onions with Mushrooms
1. Prepare the pickled onions with mushrooms by cooking with the oil, vinegar and spices until the onions are translucent.
Final Steps
1. In a large bowl, add the cooked plantains and mix in the “escabeche”.
2. Add adobo to taste, and enjoy!
