Eggplant Recipe
- 1 Eggplant, sliced lengthwise into thin slices
- 0.5 head of garlic
- 0.5 c Olive oil
- 1 tbsp liquid tahini
- 1 tsp Salt
- 1 tbsp Parsley, chopped
- 0.5 tsp Pepper

Preparation of Eggplant
1. Begin by preheating your oven to 395°F.
2. Cut the eggplant lengthwise into thin slices.
3. Sprinkle the eggplant with salt and let it sit for at least 10 minutes, ideally longer.
4. Once they have released some moisture, pat them dry with a paper towel.
5. Brush them with olive oil.
6. Place the eggplant slices on a baking sheet and roast them in the oven for about 20 minutes until they are soft and tender.
Preparation of Garlic Confit
1. Cook garlic cloves in olive oil over low heat (the ideal temperature is when you just start to see small bubbles) until they are soft and fragrant.
2. This will take about 20–30 minutes, so start this step while the eggplant is roasting.
3. This slow-roasted garlic is extremely flavorful yet mild.
4. Afterwards, you’ll also have the best garlic-infused oil!
Assembling the Toast
1. Start by toasting the sourdough bread with a drizzle of olive oil until it is golden brown and crispy.
2. Then, spread the toast with the softened garlic and add the roasted eggplant slices.
3. Finally, drizzle some tahini sauce over the top and garnish with fresh parsley.
