Eggnog Cookies
- 0.75 c Unsalted butter, cold
- 1 c Granulated sugar
- 0.5 c Eggnog
- 2 Egg yolks
- 1 tsp Vanilla extract
- 2.5 c Flour, all purpose or gluten free
- 1 tsp Baking powder
- pinch sea salt, optional
- 0.75 tsp Nutmeg
- 0.5 tsp Cinnamon
- 0.5 c Powdered sugar
- 1 tbsp Eggnog
- pinch Nutmeg

1. First, preheat oven to 350 degrees Fahrenheit.
2. Line a baking pan with parchment paper.
Mixing the Dough
1. In the bowl of a stand mixer, add cold butter and sugar.
2. Mix on high for 2 to 3 minutes, until no clumps of butter remain.
3. Add in eggnog. Stir to combine.
4. Then, add in egg yolks and vanilla. Stir to combine.
5. Add in flour, baking powder, salt, nutmeg and cinnamon. Stir until combined.
Baking the Cookies
1. Use an ice cream scooper to scoop balls of dough onto lined pan. Spread apart at least 3 inches.
2. Bake for 9 to 11 minutes or until edges are softly golden brown.
3. Remove from oven. Allow cookies to cool on pan for 5 to 10 minutes.
4. Carefully transfer to a cooling rack.
Making the Icing and Serving
1. Once cookies have completely cooled, make icing.
2. Combine powdered sugar, eggnog, and nutmeg in bowl. Stir to combine.
3. Add icing to fully cooled cookies.
4. Serve!
